How to use
Best where the vanilla has room to show — over yoghurt, porridge, rice pudding, or stirred into coffee. Also very good on a warm croissant.
Ingredients
Raw Essex honey, whole vanilla pods.
Texture & crystallisation
Raw honey sets over time — it may turn grainy or solid in the jar, especially in a cold cupboard. Nothing has gone wrong. Stand the jar in warm (not boiling) water for a few minutes and it will loosen again.
How it is made
We infuse in small batches and give it time rather than heat — whole pods, split and left in the honey for weeks until the flavour has properly settled in. The honey is never pasteurised, so it keeps everything that makes it raw.
