Raw Essex honey, chilli.
Texture & crystallisation
Raw honey sets over time — it may turn grainy or solid in the jar, especially in a cold cupboard. Nothing has gone wrong. Stand the jar in warm (not boiling) water for a few minutes and it will loosen again.
How it is made
A small batch honey with a slow heat that arrives after the sweetness rather than alongside it. We keep the chilli restrained on purpose — enough to notice, never enough to overwhelm what it is poured over.
