How to use
Spoon straight from the jar, stir into porridge or yoghurt, or spread on warm toast. Avoid adding it to anything boiling — heat undoes what makes raw honey worth having.

Texture & crystallisation
Raw honey sets over time — it may turn grainy or solid in the jar, especially in a cold cupboard. Nothing has gone wrong. Stand the jar in warm (not boiling) water for a few minutes and it will loosen again.
How it is made
Our bees forage within a few miles of the hives, so each harvest is a record of what was flowering at the time — hedgerow blossom in the spring, bramble and clover through the summer. We settle the honey, strain it coarsely to keep the pollen in, and jar it. Nothing is heated, so the texture may set over time. That is honey behaving as it should.
