Three jars. That is the whole range.

We would rather do a short list properly than a long one badly. When a batch runs out, it is gone until the bees make more.

Why Raw

Most honey on a shelf has been through a lot.

Never heated

Pasteurising honey makes it pour prettily and strips out much of what made it worth eating. Ours goes from hive to jar without heat, so it may crystallise in the cupboard. That is the point.

Barely filtered

We strain out the wax and leave the pollen where it belongs. It is why the honey looks a little cloudy against the light, and why it tastes of somewhere in particular.

One postcode

Every jar comes from our own hives in Essex. Nothing is bought in, nothing is blended with honey from anywhere else, and nothing is stretched to meet demand.

Our Apiary

A few hives, a few fields, and a great deal of patience.

Our bees forage within a couple of miles of where they live, which means the honey changes as the year does — hedgerow and fruit blossom early on, then bramble and clover as the summer settles in.

We harvest only what the colony can spare, leaving the bees enough of their own stores to get through the winter. It makes for smaller yields and a shorter season. It also makes for better honey.
