Spoon straight from the jar, stir into porridge or yoghurt, or spread on warm toast. Avoid adding it to anything boiling — heat undoes what makes raw honey worth having.

Raw honey sets over time — it may turn grainy or solid, especially in a cold cupboard. Nothing has gone wrong. Stand it in warm (not boiling) water for a few minutes and it will loosen again.

Our bees forage within a few miles of the hives, so each harvest is a record of what was flowering at the time — hedgerow blossom in the spring, bramble and clover through the summer. We settle the honey, strain it coarsely to keep the pollen in, run it through a honey creamer and then jar it.
